Canning high acid foods in a boiling-water canner

This is a very good tutorial on canning high acid foods which uses a peach butter recipe as an example.  High acid foods (pH of 4.6 or less) include fruits, tomatoes, salsas, pickles, relishes, chutneys, etc.
